Date Snowballs

Today's Parent Magazine offers a great recipe for "no-bake date snowballs". My picky-eater and I were in the mood for a treat, but didn't have all the ingredients, so we put our own Baby Brain Organics spin on this festive recipe.


1 1/4 cups chopped pitted dates
1/4 cup honey
1/4 cup apple juice/apple sauce
2 tbsp coconut oil
1 tsp cinnamon
pinch salt
2 1/2 cups crisp rice cereal
1 tbsp Baby Brain Organics
2 tbsp shredded coconuts (sweetened or unsweetened – your choice) 


1. Combine dates, honey, applesauce, coconut oil, cinnamon & salt in a small pot over medium heat. Bring to a gentle simmer and stir over heat for 5 min. Scrape into a bowl.

2. Place bowl in fridge for 30 min.

3. Use spoon to scoop out cherry-sized balls.

4. Put Baby Brain Organics and shredded coconut in a shallow bowl. Roll balls in mixture to coat (this is a great "kid job"). Chill in fridge until firm.
