Chocolate Beet Muffins

INGREDIENTS:

• 1½ cups all purpose flour
• ½ cup Baby Brain Organics
• 1 tsp baking soda
• 1 tsp baking powder
• ½ tsp salt
• ½ coconut sugar
• ¼ cup raw cacao
• ¼ cup coconut oil
• 2 cups raw beet – pureed
• 2 ripe bananas
• Zest of half a lemon or orange
• 1 cup chocolate chips - optional

INSTRUCTIONS:

1. Preheat oven to 350 degrees. Line a 12-cup muffin tin with paper liners or spray with cooking spray and set aside.

2. In a larger bowl, mix all ingredients with the mixer on low speed, until combined. (Overmixing will make your muffins tough). Divide toothpick comes out clean from the centre.
